A smash burger is made by pressing a loose ball of minced beef firmly onto a very hot flat cooking surface. The thin patty develops a dark, savoury crust while cooking quickly, giving you crisp edges and a juicy centre.

How Big Should a Smash Burger Patty Be?

For a classic thin smash burger, portion the meat into loose balls of around 80–100g each. Do not tightly pack or knead the mince. Keeping it loose makes it easier to smash thinly and helps create those crisp, ragged edges.

How to Cook Smash Burgers

  1. Heat the pan: use a heavy cast-iron pan, plancha or flat griddle and get it very hot.
  2. Portion the beef: divide the cold mince into loose 80–100g balls.
  3. Add the beef: place the balls onto the hot surface with enough room between them.
  4. Smash immediately: use a strong flat spatula or burger press to flatten each ball firmly and thinly.
  5. Season: add salt and pepper after smashing.
  6. Leave it alone: let the first side develop a deep brown crust before moving it.
  7. Scrape and flip: use a sharp-edged spatula to scrape underneath so the crust stays attached to the burger.
  8. Add cheese: place cheese on immediately after flipping and cook until the burger is thoroughly cooked.

How Long Do Smash Burgers Take to Cook?

Because smash burgers are thin, they cook quickly. Rather than relying only on a clock, cook until the first side has developed a strong brown crust, flip once, then finish cooking the burger thoroughly.
