Brisket is an incredibly flavoursome cut of beef.  Its versatility means it can be slow cooked in the oven or smoked on the BBQ.  It always delivers immense flavour and is a joy to cook. 

Our brisket is hand selected by our butchers and supplied as the flat and point (Packer Cut) perfect for smoking.

How to cook Brisket

Our 28-day matured brisket is carefully selected to ensure high-quality, tender meat. Whether slow cooked in the oven or smoked on the BBQ, it always delivers immense flavour and is a joy to cook. With the flat and point included, you have the versatility to prepare it any way you like. Trust us as the product and industry experts to provide you with the best.

Brisket is an underrated cut. It’s often considered tough or a lesser cut than other roasting joints, but slow cooking turns this often passed over meat to an absolute delicacy. Our first choice would always be to smoke the brisket in a smoker for over 8 hours, and you can easily turn your barbecue into a smoker. We’ll go through this method first, and then explain how the brisket can be made in a pot roast as well.

Please note – if you are not experienced with your barbecue or don’t have a stand alone barbecue, please use the pot roast recipe below. Do not leave the barbecue fully unattended.

Smoker Recipe

  • The first thing to do is brine your brisket ahead of smoking – this is done by putting the brisket in a solution made with water, salt, sugar, and your chosen aromatics such as bay leaves and peppercorn and placing it in the fridge for 24 hours, ensuring that the brisket is fully covered.

 

  • Once your meat is brined, prepare your barbecue:
    • The first step is to cook down your coals – lump wood charcoal should be almost white, which can take a while
    • Add in hardwood soaked in water – this will help to create smoke
    • Add in a heatproof container of water (one made from foil), which will help keep the moisture content high

Use the temperature gauge on the barbecue to regulate – if it gets too cool (below 110 degrees Celsius) – add in more coal, if it gets too hot (above 130 degrees Celsius), add in more water

  • Prepare the brisket for smoking
    • Remove your brisket from the brine and pat dry
    • This is down to individual preference, although we love a seasoning made with smoked paprika, salt, garlic, and cayenne pepper

Cover the brisket thoroughly with the dry rub

  • Place the meat in the smoker over a grill, and leave to smoke for approximately 8 hours. Use a meat thermometer to ensure cooking, the meat should be over 90 degrees

Not to worry if you don’t have a dedicated barbecue – brisket can be made deliciously in your oven or slow cooker.

 

Pot Roast Recipe

This is an easy one!

  • Season your brisket with salt and pepper on all sides
  • Sear your brisket on all sides with hot all in a heatproof pan. If you have a cast iron pot, sear it in this as you can continue to use this for the rest of your recipe. Take it off the heat
  • In an oven-proof pot, add in an array of vegetables including – whole garlic cloves, onion (cut into quarters) carrot, parsnip, and anything else that you would like to add-in. Don’t chop your vegetables too small or they’ll turn to mush
  • Place your brisket over the vegetables
  • Add in enough beef stock to cover the vegetables, and one cup of wine
  • Place the dish into the oven. Cook on 170 for approximately 3 hours or until it shreds easily with a fork. If needed, top up the liquid content with more beef stock

As for the cooler gels open the plastic pack and mix the gel contents in with the soil around your plants. It's a very efficient water retainer to keep plants thriving if they've been without rain for a while, and the gel will absorb both water and nutrients in the soil or your compost, so the plants can take them up as needed.

Our main delivery partner is DPD Local. As we’re delivering fresh meat, we can only utilise their Next Day service. This means it is collected from us at 5 pm and delivered to you the very next day.

DPD have invested heavily in their infrastructure and technology. For this reason, they are able to provide an unrivalled level of service for our customers.

Not only that but they are dedicated to reducing their carbon emission by implementing electric vehicles.

We can deliver our products to addresses within mainland UK. We are unable to deliver to Northern Ireland, any islands, or isles. Furthermore, there are certain postcodes within Scotland that our courier DPD are unable to provide their next-day service. Regular Updates

From Bromfields

When you order with us, we like to keep you updated with your order progress. Once your order is placed we’ll send you an order confirmation. Here you can check all of your order details and ensure your shipping information is correct. Then, the day before your order is due for delivery, we’ll generate your shipping label and send your details to DPD. You will be notified by email once this has been completed.

From DPD

DPD will then collect your order from us and scan your parcel(s) into their tracking system. They will send a text or email notifying you that they have your parcel and that it will be delivered the next day. And finally, on the morning of delivery, you will get another notification providing a 1-hour or 2-hour slot. would encourage all customers to download the Free DPD App to have up to date notifications on the delivery of their parcel. The customer gets a notification it is out for delivery, a 1 hour time slot, a 30 minute notification and a ‘Your Next’ notification. The customer should therefore be able to practically track the drivers every steps

Fantastic well prepared, ready for smoking

Lovely joint of meat, very little work to work to be done to get it ready for smoking. Came out perfect after 14hrs on the Traeger. Definitely will be buying again

Excellent quality slab of meat.
Thought it would came with a bit more of a fat cap but researched it and found that it doesn't really make a difference. This joint was dry rubbed. Cooked low and slow and smoked with hickory for 5 hours and wrapped then continued cooking for a further 6 hours until 205°F internal temp.
Super tasty and moist brisket.
Will definitely purchase again.

Great Brisket

Excellent piece of beef

Good price and nicely cut when the flat brisket arrived.
There was an issue with the delivery and it came a day late, however, Bromfields kept me updated with any changes and showed great customer service.
The beef was a party stopper.
