How to cook a boneless turkey crown - Bromfields Butchers

How to Cook a Turkey Crown

If you are cooking a boneless turkey crown, a good guide is 190°C / 375°F / Gas Mark 5 and approximately 40 minutes per 1kg, plus 20 minutes. Because a turkey crown is smaller than a whole turkey, the main thing to avoid is overcooking it.

Turkey Crown Cooking Times

Turkey crown weight Approximate cooking time
2kg 1 hour 40 minutes
2.5kg 2 hours
4.5kg 3 hours 20 minutes

These times are a guide only. Fan ovens may require the temperature to be reduced by around 10–20°C, so always check your oven manufacturer's guidance.

How to Prepare a Boneless Turkey Crown

  1. Take the turkey crown out of the fridge and remove all packaging.
  2. Allow it to come towards room temperature for at least an hour.
  3. Leave the joint in its netting while roasting to help it keep its shape.
  4. Preheat the oven to 190°C / 375°F / Gas Mark 5.
  5. Rub the skin with butter and season with salt and pepper.
  6. Place the turkey skin-side up in a roasting tin and pour around 400ml of water into the bottom of the tray.
  7. Cover the turkey and roasting tin loosely with foil.

How Long to Cook a Turkey Crown Per Kg

Allow approximately 40 minutes per 1kg plus an extra 20 minutes. For example, a 2kg turkey crown will take about 1 hour 40 minutes, while a 2.5kg crown will take about 2 hours.

When to Remove the Foil

Remove the foil for the final 20–25 minutes of cooking. This allows the outside to colour and the skin to crisp without drying the turkey out too early in the cook.

How to Check Your Turkey Crown Is Cooked

Check that the centre of the joint is piping hot and that the juices run clear when tested with a metal skewer or sharp thin knife. If you are using an instant-read thermometer, the internal temperature should reach 75°C / 165°F after resting.

Resting and Carving

Once cooked, remove the turkey crown from the oven, cover it loosely with foil and rest it for 20–30 minutes. Resting helps the juices redistribute through the meat and makes the joint easier to carve.

Remove the netting carefully with a knife or scissors, then carve the turkey into slices as thick or thin as you prefer.
