Brisket (Flat Cut) – Rich, Tender, and Full of Character
When it comes to hearty, flavour-packed beef that truly rewards time and care, brisket is hard to beat. Our flat cut brisket, taken from the lower chest of the cow, is leaner than the point cut yet still rich in connective tissue—perfect for slow cooking, smoking, or barbecuing until it reaches that irresistible, melt-in-the-mouth tenderness. This is the kind of cut that transforms simple seasoning into something unforgettable, especially when it starts with exceptional beef.
We source our brisket exclusively from grass-fed, free-range cattle, raised slowly on British pastures the traditional way. The result is beef with deeper flavour, better texture, and a healthier fat profile. These cattle live outdoors for most of the year, grazing on a natural diet of grasses, herbs, and forage, which not only supports animal welfare but also imparts a distinct, earthy depth to the meat. You won’t find synthetic growth promoters or rushed production cycles here—just quality, patience, and care from farm to fork.
The flat cut, also known as the “first cut” of the brisket, is a favourite among chefs and barbecue purists alike. Its uniform thickness makes it easier to cook evenly, and its clean grain makes for perfect slicing. Whether you’re preparing a traditional Sunday pot roast, smoking it low and slow Texas-style, or marinating it overnight for a Korean-style BBQ, this cut adapts beautifully to countless cooking styles. A good flat cut brisket rewards time and temperature, slowly breaking down into juicy, pull-apart perfection.
What truly sets our brisket apart is our commitment to in-house dry aging. Every joint spends time in our purpose-built dry aging room, where carefully controlled airflow, humidity, and temperature allow the beef to mature naturally. During this process, moisture evaporates from the muscle, concentrating flavour and improving texture, while natural enzymes tenderise the meat from within. Our expert butchers monitor each joint individually, only approving it for dispatch once it’s reached peak maturity. This isn’t mass-produced brisket—it’s a labour of love.
You’ll notice the difference the moment you start to cook. From the first sear, the meat caramelises beautifully, thanks to the well-developed outer surface formed during aging. As it cooks, it releases deep, savoury aromas—notes of roasted nuts, aged wood, and clean beefy richness. Slice into it after a long cook and you’ll find even the leanest parts are buttery soft, while the thin ribbon of fat running along the edge keeps every bite moist and flavourful.
For slow roasting, simply season generously with salt, pepper, garlic, and thyme, then cook at a low temperature for several hours with a splash of stock or wine until fork-tender. For smoking or barbecuing, let it rest overnight in your marinade or rub of choice, then give it a long, slow heat—low and slow is the golden rule for brisket. Once rested, slice against the grain for maximum tenderness and serve with your favourite sauces, slaws, or roasted veg.
This cut is also ideal for batch cooking or feeding a crowd. A single flat cut brisket can comfortably serve 6–8 people depending on preparation and accompaniments. Leftovers reheat beautifully and make incredible sandwiches, tacos, or hash the next day. It’s a truly versatile cut that delivers bold, beefy flavour across a range of cuisines and occasions.
If you're looking for beef that respects tradition, showcases expert butchery, and truly delivers on quality, our Brisket (Flat Cut) is the one to try. Whether you’re an experienced BBQ enthusiast or a home cook ready to try something new, this joint gives you the best foundation for unforgettable meals—slow, rich, and deeply satisfying.

As for the cooler gels open the plastic pack and mix the gel contents in with the soil around your plants.
