- Seared Kangaroo Fillet with Red Wine Reduction: Season the kangaroo fillet with a mix of crushed black peppercorns, rosemary, and salt. In a hot skillet with a touch of olive oil, sear the fillet until you achieve your desired level of browning on all sides and cook it to your liking. Remove the fillet and let it rest. In the same skillet, sauté shallots until translucent. Deglaze with red wine and simmer until reduced. Finish with beef broth and a sprig of thyme. Serve with the red wine reduction sauce.
- Kangaroo Fillet with Wild Mushroom Sauce: Pan-sear kangaroo fillet until it's cooked to your preferred level of doneness. All our orders are dispatched in a custom made packaging solution laboratory tested to achieve a temperature of between 0°C and 8°C for up to 48 hours in warm conditions, operating within the Food Safety Guidelines. Our Boxes are made from a very durable walled outer cardboard carton, which is then lined with 6 x Insulating Cardboard Cavities combined with food safe gel ice packs.
Not only are the materials used 100% safe for food packaging but they are also reusable and, once you have finished with them, they are easy to dispose of.
Cardboard has one of the most accessible recycling systems, simply contact your local authority for more information.

As for the cooler gels open the plastic pack and mix the gel contents in with the soil around your plants. It's a very efficient water retainer to keep plants thriving if they've been without rain for a while, and the gel will absorb both water and nutrients in the soil or your compost, so the plants can take them up as needed.

Fresh Meat Delivered Safely
All orders are prepared fresh to order, vacuum sealed, and packed in insulated temperature-controlled packaging with chilled gel ice packs.
Our packaging has been thoroughly tested and is designed to keep your products safely chilled for up to 48 hours in transit, even during the height of summer.
This means that in the unlikely event of a courier delay, your order will generally remain perfectly safe provided the packaging is intact and the contents are still chilled on arrival.
