Cote De Boeuf is one of the finest steak dishes and a meaty treat for beef lovers. Popular across France and Europe a single côte de bœuf is usually served as a meal for two.


Cote De Boeuf Names And Anatomy

Cows have 13 ribs and  6-12 are usually the ones you will see on our counter as joints for a Sunday roast rib. The ribs that are at the larger shoulder end are usually called “forerib” these are usually considered to be the most flavoursome and have slightly more fat. The smaller end towards the rump also known as the wing, wing rib or wing end. This end has less fat and is often more tender.

Cote De Boeuf is a steak cut from the rib primal with the rib bone still attached but depending on where you live it will have different names. In the USA it is known as a rib steak. In French cuisine the same cut also with bone attached is called côte de bœuf, which translates as “beef rib”

In the US and in the UK the rib eye or “ribeye” steak is the center portion of the rib steak but without the bone. The French “entrecôte” corresponds to the rib eye steak.

Cooking Tips For Cote De Boeuf

  • Before cooking you need to bring your steak up to room temperature. It is a large peice of meat so allow plenty of time – 30 minutes minimum.
  • Pre-heat your oven to 220°C/gas mark 7
  • Brush your steak with oil all over then season well with plenty of chunky sea salt and freshly ground pepper.
  • Bring a heavy frying pan to a high heat or even better a  griddle that will give you attractive char stripes. Allow about 3 to 4 minutes on each side. Alternatively fire up your BBQ and do this over hot coals which is a great way to get a good brown crust and impart some smokey flavours.
  • Transfer to the oven and cook for about 20 minutes for rare and another 10 for medium rare.
  • Times will vary according to the size of your particular steak. Larger and thicker will cook more slowly than a thinner piece so do check while cooking. If you use a meat thermometer 55C will be medium-rare
  • When the steak is cooked to your preferred doneness, allow it to rest for a good 10 minutes so that all the tasty juices distribute internally.

The beef is the main event here so serve simply with chips and salad. It will have plenty of juices so no sauce required but a spoonful of  one of these on the side might be perfect – mustard, bernaise sauce, salsa verde or herb butter.

We want your order to reach you in the same condition you would get it if you walked into our shop and bought it in person…….even if you live at the other end of the country. We pack all our products On over wrapped trays or in vacuum pouches to ensure maximum freshness and then your fresh meat is packed in a thick walled recyclable cool box and surrounded by ice packs to keep your order at the optimum temperature during transit.

Our custom made boxes are three times stronger than ordinary boxes and are specifically designed for carrying chilled meats.

Delivery within 24 hours of postage  - Although the boxes are designed to stay cool for 48 hours, we aim to deliver your meat in 24.

In some cases there can be delays which are outside our control but the orders are sent in thermal packaging which can keep the meat cool for up to 48 hours.


Damaged Parcels

If your order is delivered with any damage to the box or content, before disposing of the box and contacting us please ensure to take as many pictures as possible of the damage inside and outside the box and any damage to the contents. We would also need a picture that clearly shows the label on the damaged box as we will require these to investigate further.

By placing an order for delivery you accept that APC delivery drivers are authorised to leave parcels in a place that they consider safe. Bromfields Butchers cannot be responsible for any loss of parcels after they have been delivered.

Choose products and add them to your basket. once you have everything you need your can choose your collection dates or delivery dates and checkout, you may also save your basket for a later date using the wish list which can be accessed by clicking the love heart at the top right of the home page. 

When you place an order with Bromfields Butchers you will be asked to select a target delivery slot. Target delivery slots are available over set days each week and are based on when our team is dispatching goods. We aim to get all orders dispatched 24 hours before your target delivery date, your order will normally be delivered on the target delivery date that you selected and the box should be left if no one is at home at time of delivery. You can track the progress of your order in the my account section of the Bromfields Butchers website. Occasionally items may arrive after the target delivery date due to reasons beyond our control such as inclement weather or transit problems. We dispatch orders between Monday and Thursday each week. We don’t dispatch orders on Fridays or weekends.

You can track your order by logging into your account section of the Bromfields Butchers website. Once logged in, you can find out when your order was processed, dispatched and received. Help and advice is always available from the Bromfields Butchers Customer Care team. Drop them an e-mail or give them a call if you can’t find the information you need from your online account.

Unfortunately, we are unable to accept the return of any produce delivered to you but, if the goods ordered by you do not meet your reasonable satisfaction, we may, at our absolute discretion, refund or offer store credit

Every Bromfields Butchers order is packed into sturdy, temperature-controlled boxes. Our insulated boxes are designed to last up to 48hrs keeping your order fresher for longer.

As all our meat products will arrive vacuum-packed, the perfect conditioning environment, the general use-by date is 5 days from the packed-by date. All our orders are prepared the morning that they go out for delivery and each product has a label with the dates mentioned. Our ready meals are tray wrapped and have a shorter shelf life of 3-4 days.

Our meat is always chilled never frozen and that's the way you'll receive it, suitable for freezing at home. 

We recommend a maximum of 3 months.


Our lamb is dry aged for 14 days, first by our suppliers and then in-store. Our beef is dry-aged for a minimum of 21 days before it arrives to us and we continue this process for up to 40 days.

All our online payments are currently run through Shopify Payments. We accept the vast majority of online payment methods as well as Google & Apple Pay.

This includes temperature controlled packaging and delivery to your door via our couriers. We ask all customers include a safe place to leave the package (with a neighbour, behind the bin, in the greenhouse etc) with the order as packages CAN NOT be returned to the depot.

Honestly it the best bit of beef I've had in quite a while. Brushed with some white truffle infused olive oil on and cooked for 30mins in the oven. Simply mouthwatering.
