Our own Dry Cured Back Bacon, Traditionally cut thicker ideal for sandwiches or breakfasts.
We salt our own pork loins for two weeks before hanging, creating the perfect dry cured bacon.
We slice this bacon by hand! you cant get more traditional than that!
Dry curing is done by rubbing the exterior of the meat with a blend of ingredients and allowing it to sit in its own juices for a long period of time, without the addition of water. Dry curing typically results in a deeper, more robust flavour profile.
No colourings, chemicals or water added, so unlike the typical supermarket bacon, our Dry cure bacon rashers will not shrivel in the pan.
Curing salts are massaged into the pork to allow those exquisite flavours to develop, without an overwhelming salty taste.
