Also known as beef short ribs on the bone, Jacob’s Ladder is a beautifully marbled, richly flavoured cut that rewards long, slow cooking with fall-apart tenderness and sticky, caramelised edges. It’s rustic, primal, and utterly indulgent—a proper butcher’s cut that brings big impact to the table.
The name “Jacob’s Ladder” comes from the way the ribs are stacked in a vertical row, resembling the rungs of a ladder. Cut from the forequarter, these bone-in ribs are packed with connective tissue and intramuscular fat—exactly what you want when cooking low and slow. That marbling melts down during braising or smoking, basting the meat from within and creating layers of unctuous, beefy richness. It’s a cut that honours time and patience—and pays you back tenfold.
We source our Jacob’s Ladder joints from grass-fed, free-range British cattle, raised slowly and naturally on open pasture. This slower growth process develops better structure, deeper flavour, and healthier fat, without the need for growth promoters. You can taste the difference in every bite: rich, meaty, and with a satisfying depth that only traditional farming can offer.
And like all our prime beef, these ribs are finished in our dedicated dry aging room. Here, carefully controlled temperature and humidity allow the beef to mature gently, concentrating flavour and improving texture over time. Our expert butchers monitor each piece closely, only releasing the ribs when they’ve hit peak condition—firm to the touch, intensely flavoured, and ready to shine.
Jacob’s Ladder is incredibly versatile, and there’s more than one way to do it justice. For oven braising, sear the ribs until golden brown, then nestle them into a deep roasting tray with red wine, stock, garlic, and herbs. Cover tightly and cook low and slow for 3–4 hours until the meat yields effortlessly to a fork. The result is meltingly tender beef that pulls clean from the bone and bathes in its own rich sauce—perfect with mash, root veg, or crusty bread to soak up every drop.
Prefer fire and smoke? Jacob’s Ladder is a barbecue champion. In American-style low-and-slow smoking, this cut is revered for its bark-building ability. Season generously with a spice rub, smoke gently for several hours over oak or hickory chunks, and finish wrapped to keep it juicy. Once rested, the bones slide right out and the meat can be served in slabs, shredded into tacos, or piled into smoky beef rolls.

All our orders are dispatched in a custom made packaging solution laboratory tested to achieve a temperature of between 0°C and 8°C for up to 48 hours in warm conditions, operating within the Food Safety Guidelines. Our Boxes are made from a very durable walled outer cardboard carton, which is then lined with 6 x Insulating Cardboard Cavities combined with food safe gel ice packs.
Not only are the materials used 100% safe for food packaging but they are also reusable and, once you have finished with them, they are easy to dispose of.

As for the cooler gels open the plastic pack and mix the gel contents in with the soil around your plants. It's a very efficient water retainer to keep plants thriving if they've been without rain for a while, and the gel will absorb both water and nutrients in the soil or your compost, so the plants can take them up as needed.

Our main delivery partner is DPD Local. As we’re delivering fresh meat, we can only utilise their Next Day service. This means it is collected from us at 5 pm and delivered to you the very next day.
DPD have invested heavily in their infrastructure and technology. For this reason, they are able to provide an unrivalled level of service for our customers.
Not only that but they are dedicated to reducing their carbon emission by implementing electric vehicles.

We can deliver our products to addresses within mainland UK. We are unable to deliver to Northern Ireland, any islands, or isles. Furthermore, there are certain postcodes within Scotland that our courier DPD are unable to provide their next-day service. You can refer to our postcode list below.

When you order with us, we like to keep you updated with your order progress. Once your order is placed we’ll send you an order confirmation. Here you can check all of your order details and ensure your shipping information is correct. Then, the day before your order is due for delivery, we’ll generate your shipping label and send your details to DPD. You will be notified by email once this has been completed.
From DPD
DPD will then collect your order from us and scan your parcel(s) into their tracking system. They will send a text or email notifying you that they have your parcel and that it will be delivered the next day. And finally, on the morning of delivery, you will get another notification providing a 1-hour or 2-hour slot. would encourage all customers to download the Free DPD App to have up to date notifications on the delivery of their parcel. The customer gets a notification it is out for delivery, a 1 hour time slot, a 30 minute notification and a ‘Your Next’ notification. The customer should therefore be able to practically track the drivers every steps
