Smash burgers have gained popularity for their unique cooking method that involves smashing a ball of ground beef onto a hot griddle, creating a crispy, caramelised crust. This technique locks in the juices, resulting in a tender, flavourful patty that is hard to resist.

The Importance of Cheese

When it comes to burgers, the choice of cheese can make or break the experience. While there are countless options to choose from, deli American cheese stands out for its superior melting capabilities and rich, creamy flavour. Opt for the deli-sliced variety for the best results.

Building the Perfect Smash Burger

Start with high-quality ground beef and form it into small balls. Heat a griddle or skillet until it's smoking hot, then place the balls of meat on the surface. Use a sturdy spatula to smash the balls flat, allowing them to cook until a golden crust forms.

Once the patties are cooked to your liking, top them with a slice of deli American cheese and allow it to melt slightly. Transfer the patties to a buttered bun and add your favorite toppings, such as lettuce, tomato, pickles, or a zesty sauce.

Beef Matters:
Make sure you’re using an 80/20 blend—80% lean beef, 20% fat. Could you go leaner? Sure. Should you? Absolutely not. The magic of a great burger is in its juiciness. That glorious stream of beefy fat dripping down your arm, pooling on your plate, clinging to the corners of your mouth—that’s not mess, that’s flavor. Don’t deny yourself that joy.

The Bun:
Brioche or potato buns are the gold standard. They're soft, buttery, and perfectly absorb all the burger’s juices without falling apart. Brioche, especially, adds that extra hint of richness that takes things over the top. Use what you like, of course—it’s your burger. But if you ask me? Brioche all day.

 

🍔 Ultimate Smash Burger Recipe

🔪 Ingredients

Burger Sauce

  • ½ cup mayo

  • 1 tbsp ketchup

  • 1 tbsp yellow mustard

  • 1 tbsp finely diced pickles or relish

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1 tsp pickle juice (optional)

  • Salt & pepper to taste

Burger Juice

  • 1 tbsp Worcestershire sauce

  • 1 tbsp yellow mustard

  • 1 tsp kosher salt

  • 1 tsp ground black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

Burgers

  • 1½ to 2 lbs Bromfields Smash Burger Mix (80/20 blend — 80% lean, 20% fat) 

  • Kosher salt & pepper (for seasoning before cooking)

  • 6 brioche or potato buns, lightly toasted

  • 6 slices American or cheddar cheese

Optional Toppings

  • Raw sweet onion slices

  • Dill pickles

  • Lettuce

  • Tomato

  • Extra burger sauce


👨🍳 Instructions

1. Make the Burger Sauce

In a small bowl, mix all sauce ingredients until smooth. Cover and refrigerate until ready to use.

2. Mix the Burger Juice

In another small bowl, stir together all the burger juice ingredients.

3. Prep the Beef

In a medium bowl, add the ground beef. Pour the burger juice over the beef and gently mix using your hands or a spoon. Be very gentle—don’t overwork the meat.

Form the beef into 3–4 oz balls. Cover with plastic wrap and refrigerate for at least 30 minutes, or freeze for 15 minutes. Cold meat = better sear.

4. Cook the Burgers

Heat a large cast iron skillet over high heat until super hot (a water droplet should sizzle and vanish immediately).

Remove the beef balls from the fridge. Sprinkle each with kosher salt and black pepper.

Add 3–4 balls to the skillet, leaving room to smash. After 30 seconds, smash each patty down hard using a heavy spatula or another pan. Press until very thin.

Let cook untouched for 3–4 minutes until the edges are brown and crispy.

5. Flip & Cheese

Flip each patty and immediately top with a slice of cheese. Cook for 1–2 minutes more, just until the cheese is melted.

6. Build Your Burger

Place patties on toasted buns. Add sauce, pickles, onions, or any of your favorite toppings.

Serve hot and devour that juicy perfection. 🔥
